Ξύνουμε τον παστό μπακαλιάρο, πριν ακόμη τον ξαλμυρίσουμε.

Τον τεμαχίζουμε και τον ξαλμυρίζουμε σε νερό για 24 ώρες. Κατά τη διάρκεια του ξαλμυρίσματος, αλλάζουμε το νερό 2-3 φορές.

Αφού, λοιπόν ξαλμυρίσουμε τον μπακαλιάρο, τον γδέρνουμε, τον λαδώνουμε και τον τοποθετούμε σε ταψί.

Κατόπιν στρώνουμε τις πατάτες πάνω στα κομμάτια του μπακαλιάρου.

Καθαρίζουμε τα κρεμμύδια και, αφού τα κόψουμε σε φέτες λίγο χονδρές, τα σοτάρουμε, σε ένα τηγάνι, στο λάδι μαζί με τα σκόρδα.

Μόλις μυρίσουν, προσθέτουμε τη ντομάτα, λίγο πιπέρι, τα δαφνόφυλλα κι αφήνουμε να βράσουν όλα τα υλικά 5 λεπτά περίπου.

Περιχύνουμε το ψάρι με τη σάλτσα, προσθέτουμε και λίγο βραστό νερό και φουρνίζουμε το ψάρι σε μέτρια θερμοκρασία 150-200 βαθμούς.

Όταν απορροφηθούν τα υγρά, βγάζουμε από το φούρνο και σερβίρουμε.

  • 1 κιλό μπακαλιάρο παστό ξαλμυρισμένο
  • 1 κιλό πατάτες ελαφρώς βρασμένες και κομμένες στρόγγυλες
  • 5 κρεμμύδια μεγάλα
  • 1 κεφάλι σκόρδο(μετρίου μεγέθους) χονδροκομμένο
  • 1 φλιτζάνι ντομάτα ψιλοκομμένη
  • 2 φλιτζάνια ελαιόλαδο
  • 5 φύλλα δάφνης
  • κόκκινο πιπέρι
